Heart Healthy Spinach, Red Pepper, and Feta Quiche

  1. Preheat oven to 350 degrees F.
  2. Blind bake the crust: Line the pie shell with aluminum foil and weight it with pie weights or beans. Bake for 15 to 20 minutes until light golden brown.
  3. Increase oven temperature to 375 degrees F.
  4. In a large skillet, heat oil over moderate heat. Add onion and cook until softened. Turn up heat to moderately high. Add pimentos, garlic, and spinach and cook, stirring until just heated through. Drain off any excess liquid. In a bowl add Egg Beaters, Parmesan and milk. Add the spinach mixture and feta, and pour into the pie shell. Bake on a sheet pan in the middle of the oven.

Fresh Romaine Salad With Strawberries

(Serves Four)
  1. Toss all ingredients together in large salad bowl.
  2. Add Balsamic Vinegar.
  3. Chill for ten minutes and enjoy.

Fruit Parfait

(1 Serving)
  1. Wash and clean all produce accordingly.
  2. Combine and soak honey, Lemon/Orange Juice, sugar, strawberries, blueberries, and bananas. Toss slightly and chill.
  3. Using parfait glass, carefully fold in ingredients into layers in glass for presentation (Granola, Yogurt, Fruit,), repeating the steps until the glass is full.
  4. Add small amount of whipped cream and almonds to top.
Dried Fruits such as cranberries and apricots may also be used as well as any other fruit or berry of your choice.
